Ingredients• 2 cups flour
• 2/3 cups sugar
• 3 teaspoons baking powder
• 1 cup yogurt
• 1 teaspoon vanilla
• 2 eggs
• 2 big apples
Directions:Preheat oven to 200 degrees. Line cupcake pans with paper liners.
Combine flour, eggs, sugar and baking powder in a large mixing bowl. Add shortening the yogurt, vanilla and apples cut on small cubes. Beat for 1 minute on medium speed.
Spoon cupcake batter into paper liners until 1/2 to 2/3 full.
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
Once cupcakes are completely cooled, decorate as you desire - cream, chocolate, marmalade, etc.
